We have several Life Group members doing the Advocare challenge, so that was our food theme for Life Group a couple weeks ago! This recipe was great, and I will absolutely make it again!

INGREDIENTS
1 1/2- 2 Cups Brown Rice
2 lb 93/7 Ground Turkey
1 Cup Red Bell Peppers, chopped
1 Cup Yellow Bell Pepper, chopped
1 bunch of Green Onions, chopped
1/2 Red Onion, chopped
1/4 Cup Cilantro, chopped
4 Tbsp minced garlic
1/4 Tsp Cayenne Pepper
2 Tbsp Olive Oil or Coconut Oil
1/4 Tsp Chili Powder
1/4 Tsp Pepper Flakes
2 Tsp Cinnamon
2 Tsp Cumin
Salt & Black Pepper to taste

METHOD
1. Cook rice according to package directions.
2. While rice is cooking, heat oil in large skillet on medium heat; sautee garlic, green and red onions for about 2 minutes. Add ground turkey and cook for about 10 minutes until turkey is fully cooked and brown; stir frequently and continuously break large chunks of turkey into smaller pieces.
3. Stir in bell peppers, pepper flakes, spices and thyme.
4. Add cooked rice and cilantro to turkey mixture and mix well.
5. Add salt pepper to taste.
