Paleoista Truffles

I made a batch of these beauties to have for Halloween so I won't feel (as) tempted to eat all the candy we'll be passing out! :)

Raw Paleo Truffles
 ½ cup raw cacao nibs, ground, plus a little extra for dusting (I used cacao powder from TJ Maxx)
¼ cup coconut oil
¼ cup coconut butter
¼ cup creamy roasted almond butter
¼ cup honey

-Combine cacao, coconut oil, coconut butter, almond butter & honey.
-Stir ingredients until well combined
-Place bowl in freezer for 10 mins
-Roll into 1 inch balls
-Roll in the extra ground nibs or shredded coconut
-Place in tiny foil candy cups and then into a box for presentation

*Mine were very liquidy since I softened the coconut oil and almond butter, so I had to keep them in the freezer longer, stirring every few minutes. The truffles aren't perfectly round and pretty, but the shredded coconut covers that up. Plus no one cares, because they're rich and amazing!
