Better paleo pancake...this one is for you Beth :)


The standard Paleo pancake is 1 egg, 1 ripe banana mashed, and 1 Tbsp of nut butter. This recipe is simple and delicious. But I have had trouble in the past with my pancakes being too thin and falling apart when I try to flip them. 

This recipe made bigger, fluffier pancakes that were super tasty. 

Original recipe from: Lemons N Lyme
1 egg
1/2 banana, mashed (I used one whole banana)
1 Tbsp coconut flour
1 Tbsp ground flaxseed
 Pinch of salt
1/8 tsp baking powder
Optional: 2-3 T of blueberries
Optional:1/2 scoop protein powder ( Added this to mine)
Coconut oil or butter for cooking 

Mash the banana then add in the egg. Mix all ingredients. Cook on medium heat and flip after 3 mins or until golden brown. This will make about 2 small pancakes. Top with butter, coconut oil, or sun butter :)
