Morning Glory Muffins

I've been craving a giant, cafe-style morning glory muffin! So I researched a few recipes and made these! Perfection. 


I doubled the recipe, which made 12 standard muffins and 9 jumbo muffins! 

Morning glory muffins: 
2 cups flour 
1/2 c brown sugar 
1/2 c sugar 
2 tsp baking soda 
2 tsp cinnamon 
1/4 tsp salt 
2 cups peeled and shredded carrots (about 5 large) 
1/3 c raisins or craisins 
1/2 c chopped walnuts 
1/2 Unsweetened coconut flakes 
1 Apple, shredded 
3 eggs 
1/2 c vegetable oil 
1/2 c applesauce 
2 tsp vanilla 
  1. Preheat oven to 325 degrees F. Grease muffin cups, or line with muffin liners.
  2. In large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. 
  3. In a separate bowl, beat the eggs, oil, and vanilla. Stir in the carrot, raisins, nuts, coconut, and apple.
    Stir the dry mixture into the wet, just until moistened. Scoop batter into prepared muffin cups.
    Bake 20 mins for standard muffins and 25 mins for jumbo. You can test with a toothpick!When baking time is almost finished, melt 2 T. Butter and 1 scant T of sugar. Drizzle over muffins and place oven on High broil. Broil for several mins, until tops are browned and pretty! Watch closely, they burn quickly! This should only take 1-2 minutes. Leave the oven cracked open.
