Fancy Sweet Potatoes

So festive looking, don't you think??

4 sweet potatoes
avocado oil (I used olive oil)
2 T. almond flour 
1 T. coconut flour 
1 tsp onion powder
1 tsp garlic powder 
1/2 tsp salt 
cashews, chopped (I used pecans)
unsweetened dry cherries 

1. Slice sweet potatoes carefully at 1/4 inch intervals, stopping just above the bottom of the potato (instead of cutting all the way through.)
2. Place potatoes on a baking sheet. Pour enough oil over each to coat it, making sure to pour between the cuts. 
3. Mix flours and spices. Sprinkle over sweet potatoes. 
4. Bake at 375 for 1 hour or more. Remove from oven and top with cashews and cherries!
