Saturday BBQ and a Paleo Fruit Dip!

Billie's classmates in the Army love getting together. I think this was our third BBQ since we've been here! So fun. And I'm thankful, because you know the wives love to socialize. :) 


I made a Paleo fruit dip from Everyday Paleo. Loved it! Next time, I will refrigerate it a bit longer, so it will have more time to thicken up.


Paleo Fruit Dip
Here is the recipe: 


Decadent Fruit Dip
1 cup coconut milk
1 teaspoon vanilla
2 ripe bananas
2 teaspoons coconut flour
1 1/2 tablespoons unsweetened cocoa powder (Optional)

Put all the ingredients into a food processor or blender, except for the cocoa powder, and blend until smooth. If desired, pour out half of the mixture and add the cocoa powder to the food processor with the other half of the dip.  Process again until the dip is well mixed.  Now you have 1 vanilla dip and 1 chocolate dip!  Makes 1 cup of vanilla and 1 cup of chocolate.  After some time in the refrigerator, the dip will become even thicker.

*Do you know the tip of tossing your apple slices in a bit of lemon juice to help them not turn brown? It works! 







We had to quickly pack up and drive home when the rains started. Monsoon season is super unpredictable! But I love the thunder and lightening and all the colors the sky turns when it rains.
