I have been a little under the weather. Sore throat + rainy weather = craving for warm soup! But I needed a quick and easy recipe... Something that wouldn't take much time or energy!
And this is what I came up with... So delicious!!
Ingredients:28 ounce can whole tomatoes
2 T tomato paste
1 cup beef or chicken broth
1 can coconut milk (not the light version)
1-2 T minced garlic
Adobo seasoning (mcCormicks)**
Salt and pepper
1. Put all these ingredients in a pot and bring to a slight boil. Reduce to simmer.
2. Use an immersion blender to blend. Taste test and adjust seasoning as needed.
** this is what I used. But you could substitute anything to give it a kick of flavor! (Copied from Google)
