Raw Chocolate Chip Maca Blondies

These are very similar to Larabars, and we devoured them!

This recipe was copied from The Organic Dietician. 

Ingredients
  • 1 1/4 cups raw cashews
  • 1 1/4 cups raw almonds
  • 1/4 cup maca powder
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla powder or extract
  • pinch salt
  • 15 large dates, pitted
  • 1-3 tablespoons water *if needed
  • 1/2 cup chocolate chips
Instructions
  1. In a food processor add the nuts and pulse a few times to break them up.
  2. Add the maca, cinnamon, vanilla, and salt and pulse a couple more times just to combined.
  3. While the processor is running at the dates one at a time until the mixture comes together into a dough.
  4. If the dough seems to dry add water 1 tablespoon at a time until firm but not sticky.
  5. Add 1/4 cup chocolate chips and pulse to mix them into the dough slightly.
  6. In a 8x8 baking pan lined with parchment paper scrape out the dough into the pan.
  7. Press the mixture evenly into the bottom of the pan.
  8. Sprinkle the remaining 1/4 cup chocolate chips on top of the blondies and press down with your fingers to get them to stick.
  9. Let sit in the fridge for about 30 minutes.
  10. Cut into squares.
  11. Store in an airtight container for up to one week.
