Ingredients
- 1 1/4 cups raw cashews
- 1 1/4 cups raw almonds
- 1/4 cup maca powder
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla powder or extract
- pinch salt
- 15 large dates, pitted
- 1-3 tablespoons water *if needed
- 1/2 cup chocolate chips
Instructions
- In a food processor add the nuts and pulse a few times to break them up.
- Add the maca, cinnamon, vanilla, and salt and pulse a couple more times just to combined.
- While the processor is running at the dates one at a time until the mixture comes together into a dough.
- If the dough seems to dry add water 1 tablespoon at a time until firm but not sticky.
- Add 1/4 cup chocolate chips and pulse to mix them into the dough slightly.
- In a 8x8 baking pan lined with parchment paper scrape out the dough into the pan.
- Press the mixture evenly into the bottom of the pan.
- Sprinkle the remaining 1/4 cup chocolate chips on top of the blondies and press down with your fingers to get them to stick.
- Let sit in the fridge for about 30 minutes.
- Cut into squares.
- Store in an airtight container for up to one week.
