Snickerdoodle (and then chocolate chip) Cookies

I tried a new paleo-friendly cookie recipe for a football party this weekend!

Everyone liked them, even the non-paleo folks. :)

First up... snickerdoodles. Then I modified that recipe a little to make chocolate chip cookies.



Snickerdoodle Cookies (read below for the chocolate chip version!)
From: A Kitchen Cafe

2 cups almond flour (or meal)
1/8 tsp salt
1/8 tsp baking soda
1 1/4 tsp cinnamon
1/4 coconut oil (not melted- kind of like softened butter. So if it's hard, let it soften some. If it's melted, throw it in the fridge for a bit)
2 tbsp honey
topping:
1/3 cup coconut sugar (I bought this at our local health food store, The Co-Op)
1/2 tsp cinnamon
Preheat oven to 350.
In a blender, combine flour, soda, salt and cinnamon. Pulse in the coconut oil and honey.
Roll 1 1/2 tbsp scoops into a ball and then roll through the topping. Put onto a cookie sheet lined with parchment paper and flatten slightly with a cup.
Bake 7-9 minutes and let cool. They may not seem done at the end, but they'll firm up.
***To make the chocolate chip cookies, omit the cinnamon in the recipe. Add the chocolate chips (I use Enjoy Life chips) at the very end. Omit the topping too! :)
